Why not take an existing, published story and rewrite it using a different theme? For example, say you have found a story that you like and its theme is revenge. Now choose a different theme that appeals to you: jealousy, envy, greed, a mother's love for her children - whatever you like. Now think about how that story could be rewritten using the new theme. You could keep the characters and setting if you like, and some of the plot could remain intact. But there will be many changes. If you come up with something good, make it uniquely yours by changing the characters and possibly the setting too. At the very least you will need to change their names, but you might decide to make more fundamental changes or introduce some of your own favourite characters.
